The France international opened the scoring by capItalising on a horrendous mistake from Saints' goalkeeper Artur Boruc, before beating the Pole with a well-taken second-half penalty.
After the game he revealed how his grandfather was the inspiration behind his match-winning performance, which keeps Arsenal at the top of the Premier League.
"I wanted to give a thought to my grandfather, who died three days ago," Giroud told Telefoot.
"It was a pleasure to score. I wanted to dedicate the goals to him. It's been a while since I had scored. It feels good, especially as we remain first."
The former Montpellier striker also commented on France's World Cup qualification earlier in the week, as les Bleus overcame a two-goal deficit against Ukraine to book their place at Brazil 2014.
"I've seen guys who had tears in their eyes. A reversal like that, that makes a team whole. It really has the feeling of accomplishment," he added.
"The feeling of having done the good thing and having reconciled with the French people... We were like kids and very proud."
